Spring!! Cabbage and Onion Potage Soup

When spring starts, local fresh cabbages and onions are very seasonal and much sweeter. Making soup with these seasonal items is a way to enjoy spring and fill your stomach. Check out this simple recipe.


Ingredient (serving:4):

1 1/2 cup chopped spring cabbage
1 cup sliced fresh onions
A half cup sliced fresh potatoes
Two tablespoons butter
2 cups of water
One tablespoon consomme powder
One cup soy milk
Salt and pepper
Croutons
Parsley

Directions:

1. Soak the sliced potatoes in a bowl of water.

2. In a frying pan, fry the harder parts of the cabbage first, add water and consomme powder. Then, add the rest of the cabbage and potatoes and boil them together until they become soft.

3. Remove pan from the heat and blend in a blender after it cools down.

4. Pour the mixture into a deep pot and add soy milk. Warm up on low heat slowly and flavor with salt and pepper.

5. Serve in a bowl with croutons and parsley on top.
