Teriyaki Chicken Colorful Sushi

Add a little extra to a regular treat as a unique, fun and inexpensive gift this Valentine's Day.

March 3rd is Hina Matsuri , on this day Japanese families with daughters decorate Hina dolls and wish their daughter a happy, healthy life and future bridal success. They normally enjoy a bowl of clear clam soup and a colorful plate of sushi topped with a variety of fresh sashimi, a cooked egg, etc. to share with family and friends for the cerebration. I found a unique sushi recipe which is easy to prepare and wonderful for meat lovers. This is a great party dish for any occasion. Why not share your experiences and great memories of Japan with this party food when you get back to the States?


Ingredients:

11 oz chicken thigh
Three eggs
1 tablespoon milk
15 oz cooked rice
2 1/2 slices cheese
Sauce ? 2 1/2 tablespoons soy sauce
2 1/2 tablespoons honey
6 mini tomatoes (or cut one tomato into 8 pieces)
Chopped radish sprouts

Directions:

1.Mix the eggs and milk well in a bowl and make scrambled eggs in a frying pan.
2.Make small incisions around the chicken thigh and fry it on the skin side first on medium heat.
3.Cook chicken well until the skin turns brown and flip it to the other side. Cover the frying pan with a lid when you cook on the other side.
4. Add soy sauce and honey into the frying pan. Remove the cooked chicken from the heat and keep the sauce in the frying pan. Chop the chicken into bite size pieces.
5. Lay saran wrap in a pound cake pan. Lay the chicken on the bottom and add some rice, scrambled eggs, cheese and rice again in that order. Press them firmly.
6. Serve the dish on a plate and pour the reheated sauce on the top. Decorate the top of the dish and plate with sliced mini tomatos and chopped radish sprouts.
