Ramen with Peanut Sauce

By Robert Finley

College kids in dorms across America have crafted easy ways to make delicious snacks for years now. Whether it be buttered rolls turned into donuts, or burritos stuffed with macaroni and cheese, these snacks might make you cringe at first, but (sometimes) end up being tasty and unique.

The following recipe is one that is as popular with those living the dorm life as it is with the standard-dwelling citizens of the world. It is simple, takes hardly any time, and can be adapted to fit your tastes. Here's the specifics:

Ingredients:
1 packet of ramen noodles
2 T peanut butter
2 T water
1 T soy sauce
1 T lemon juice
Sprinkle of pepper flakes to taste
2 baby carrots, diced
1/8 cup cucumber, diced
1/8 cup onion, diced
1/8 cup red pepper, diced

Directions:
Sauce prep:
1. Place the peanut butter, water, soy sauce, lemon
juice, pepper flakes, carrots, cucumber, onion, and red pepper into a bowl and stir well. 2. Microwave for 30 seconds.

Ramen:
1. Cook the ramen noodles as you normally would when prepping a bowl of ramen.
2. Strain the noodles completely once cooked.
3. Transfer the noodles to a bowl and mix in the sauce.
Enjoy!
